These are moist and delicious. This mix can be made into mini, regular, or Texas-size muffins. Flavor enhances the next day and you can really taste the ingredients and fruits used to make these wonderful muffins. You will add butter, eggs, vanilla, and milk before baking.
For the Fruit & Chocolate Chip Muffins:
Additional Ingredients: 2 Eggs, 1 tsp Vanilla, 1/2 Cup Butter, 1/2 Cup Milk
Instructions: Soften butter to room temperature. Preheat the oven to 375 degrees. In a bowl, beat butter until fluffy then add the eggs and vanilla. Stir flour mixture into the butter mixture and add the milk. Fill prepared muffin tins 2/3's of the way full. Sprinkle with the streusel mixture. Bake 25 to 30 minutes or until lightly golden. Ingredients: Flour, Baking Powder, Salt, Sugar, Dried Fruit (except for banana) or Chocolate Chips Streusel Topping Ingredients: Oats, Brown Sugar, All-purpose Flour, Cinnamon
For the Banana Muffins:
Additional Ingredients: 1/2 C Butter, 2 Eggs, 2 Bananas, 1/2 C Milk
Directions: Soften butter to room temperature. Preheat oven to 350*.
In a bowl, beat butter, bananas & eggs. Stir in the flour mixture and add the milk. Fill prepared muffin tins 2/3's of the way full.
Bake 25 to 30 minutes or until lightly golden.
