Such a moist and full of flavor lemon loaf. Can be made into muffins, can add your favorite fruit. Comes in Gluten Free as well.
Additional Ingredients: 3 eggs, 2 TBSP Butter (softened), 1/3 C Lemon Juice, 2 tsp lemon extract, ¾ C Sour Cream (or plain Greek yogurt)
Directions: Preheat oven to 350 degrees, prepare a loaf pan and set aside. Place the additional ingredients in a bowl and mix well, add the dry ingredients and mix until combined. Pour the batter into the loaf pan and bake for 55 minutes or until a toothpick comes out clean. Let set for at least 10 minutes, then remove from pan so it can completely cool. Make the frosting by combining 1 tsp Vanilla with the dry ingredients and blend well. Frost the lemon loaf and place in the refrigerator so the icing sets up.

Frosting: Powdered Sugar and lemon zest
